Marinated in spiced yoghurt, Kashmiri chillies, and garlic, then roasted over roaring tandoor charcoal embers with charred edges.
Simmer the minced mutton with the chana dal, onion, ginger-garlic paste, and dried red chilies in 1 cup water until the dal is soft and the water has evaporated.
Cool the mixture, then grind it with the garam masala and salt into a smooth, sticky paste without adding any water.
Refrigerate the mixture for 30 minutes so it firms up and is easy to shape.
Divide into 8 balls, flatten each into a round patty, and coat lightly with the beaten egg.
Shallow-fry the patties in oil over medium heat for 2-3 minutes per side until deep golden.
Serve hot with mint chutney and sliced onion rings.
