Chef's Menu Description

An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.

Ingredients

  • • 1 cup dry coconut (kopra), flakes or grated
  • • 10 dried red chilies (Byadgi and Guntur mix)
  • • 8 garlic cloves
  • • 1 tbsp coriander seeds
  • • 1 tsp cumin seeds
  • • 1 tsp salt
  • • 1 tbsp oil

Preparation Steps

1
Phase 1

Dry-roast the dry coconut flakes until lightly golden, then roast the dried red chilies, coriander seeds, and cumin seeds until aromatic, and cool everything.

2
Phase 2

Grind the roasted ingredients with the garlic cloves and salt into a dry, coarse, flaky chutney powder.

3
Phase 3

Heat the oil, add the chutney, and toss for 2 minutes so it absorbs the oil and turns fragrant.

4
Phase 4

Spread the chutney on a plate and cool completely so it stays dry and crisp.

5
Phase 5

Sprinkle generously over misal, usal, or thalipeeth, or serve on the side with bhakri and dal.
