Chef's Menu Description

An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.

Ingredients

  • • 2 cups fresh mint leaves
  • • 1 cup fresh coriander leaves
  • • 2 green chilies
  • • 1/2 inch ginger
  • • 1 tbsp lemon juice
  • • 1/2 tsp roasted cumin powder
  • • 1/2 tsp salt
  • • 1/4 cup cold water

Preparation Steps

1
Phase 1

Rinse the mint and coriander leaves thoroughly and pat them dry to keep the chutney from turning watery.

2
Phase 2

Grind the leaves with the green chilies, ginger, roasted cumin powder, salt, lemon juice, and cold water into a smooth, bright paste.

3
Phase 3

Taste and adjust the salt or lemon juice, adding a little more water only if needed for a spoonable consistency.

4
Phase 4

Serve fresh with samosas, kebabs, chaats, or as a spread in sandwiches and wraps.
