An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Soak dried chickpeas overnight and cook until tender, or drain cooked chickpeas well.
Heat the coconut oil, pop the mustard seeds, add the urad dal, dried red chilies, curry leaves, and asafoetida, and fry until the dal is golden.
Add the chickpeas and salt, tossing well and lightly mashing a few chickpeas so they absorb the tempering.
Fold in the grated coconut and cook for another minute.
Serve warm as a sundal-style side with rice, or on its own with a wedge of lemon.
