An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Dry-roast the toor dal and dried red chilies in the sesame oil until the dal turns golden and aromatic, then cool completely.
Coarsely grind the roasted dal and chilies with the coconut, cumin seeds, asafoetida, and salt, sprinkling minimal water to form a thick thogayal.
Heat a little more oil, pop the mustard seeds, and add the curry leaves until they crackle.
Fold the tempering into the ground thogayal and mix well.
Serve mixed into hot rice with a spoon of ghee, or as a side with dosa and idli.
