An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Whisk the besan, yogurt, water, turmeric, ginger-green chili paste, salt, and 1 tbsp of the oil into a completely lump-free batter.
Cook in a heavy pan, stirring constantly, for 8 to 10 minutes until the batter thickens and turns glossy.
While still hot, spread the batter paper-thin over the back of an oiled tray and let it cool for 10 minutes.
Cut into 2-inch strips and roll each one up tightly.
Heat the remaining oil, crackle the mustard seeds and curry leaves, and pour over the rolls.
Serve the khandvi at room temperature with green chutney.
