A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Soak the tamarind in the warm water for 30 minutes, then squeeze and strain to extract a smooth pulp.
Simmer the pulp with the jaggery until it melts completely.
Add the dried ginger powder, roasted cumin, red chili powder, and black salt and simmer for 8 minutes into a glossy, spoon-coating chutney.
Stir in the rose water and take off the heat.
Cool and serve this meethi saunth chutney with dahi bhalla, papdi, or any chaat, or bottle it refrigerated.
