Chef's Menu Description

An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.

Ingredients

  • • 2 cups cauliflower florets, chopped small
  • • 1 cup carrots, cut into sticks
  • • 1/4 cup mustard oil
  • • 1 tbsp mustard seeds, coarsely ground
  • • 1 tsp fennel seeds
  • • 1/2 tsp fenugreek seeds
  • • 1/2 tsp nigella seeds
  • • 1 tsp red chili powder
  • • 1 tbsp coarse salt

Preparation Steps

1
Phase 1

Wash the cauliflower and carrots and dry them completely; any moisture spoils the pickle.

2
Phase 2

Toss the vegetables with half the salt and set aside for 2 hours, then drain the released water.

3
Phase 3

Coarsely grind the mustard, fennel, fenugreek, and nigella seeds, then mix with the red chili powder and remaining salt.

4
Phase 4

Heat the mustard oil until it just smokes and let it cool; toss the vegetables with the ground achari masala and oil in a sterilized jar.

5
Phase 5

Leave the jar in the sun or a warm spot for 3-4 days, shaking it daily.

6
Phase 6

Serve the tangy, spiced pickle in small portions with roti, paratha, or dal.
