An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Knead the besan with the carom seeds, 1 tbsp of the oil, 1/4 tsp of the salt, and 1/4 cup water into a stiff dough.
Roll the dough into thin cylinders and boil them in 3 cups of water for 10 minutes, then cut into 1/2-inch pieces (gatte).
Heat the remaining oil, crackle the cumin seeds, and add the asafoetida and chili powder off the heat.
Return to low heat and stir in the whisked yogurt gradually so it does not split.
Add the gatte and remaining salt and simmer for 10 minutes until the gravy thickens.
Serve with roti or rice.
