Ingredients

  • • 1 medium onion, (peeled and finely chopped)
  • • 60 g wholemeal breadcrumbs
  • • 1/2 tsp garlilc granules
  • • 2 bacon medallions, (finely chopped)
  • • 50 g dried cranberries, (coarsely chopped)
  • • 2 tsp orange zest, (finely grated)
  • • 1/2 tsp dried rosemary
  • • 1/2 tsp dried thyme
  • • 1 medium egg, (beaten with a fork)
  • • salt and pepper, (to taste)
  • • low calorie cooking spray

Preparation Steps

1
Phase 1

Pre-heat the oven to 200ºC. Line a baking tray with a sheet of non-stick baking paper.

2
Phase 2

Spray a small frying pan with low calorie cooking spray and place over a medium heat. Add the onion and fry for 5 minutes until softened.

3
Phase 3

Place the onion in a medium mixing bowl and add the breadcrumbs, garlic granules, bacon, cranberries, orange zest, rosemary, thyme and season with salt and black pepper. Mix to combine.

4
Phase 4

Add the egg, a little at a time, and stir in until the mixture is of a suitable consistency to hold together. You may not need to add all the egg. Divide the mixture into 8 and roll into 8 small balls.

5
Phase 5

Place the stuffing balls on the lined baking tray and spray with a little low calorie cooking spray. Place in the preheated oven and bake for 15-18 minutes until firm and golden. Serve at once with your Christmas dinner or Sunday roast.
