Chef's Menu Description

An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.

Ingredients

  • • 3 very ripe bananas (peeled and flesh mashed with a fork)
  • • 1 small onion (peeled and finely chopped)
  • • 1 green chilli (deseeded and finely chopped)
  • • 2 garlic cloves (peeled and minced)
  • • 3 tbsp white wine vinegar
  • • 1 tbsp soy sauce (dark or light)
  • • 1 tbsp tomato puree
  • • 1 tbsp white granulated sweetener
  • • 1/2 tsp ground ginger
  • • 1/2 tsp ground turmeric
  • • 1/4 tsp ground allspice
  • • low calorie cooking spray

Preparation Steps

1
Phase 1

Spray your saucepan with low calorie cooking spray and place over a medium heat. Add the onions, garlic and chilli and cook gently for 5 minutes until the onions begin to soften.

2
Phase 2

Add the rest of the ingredients to the pan and stir well. Let simmer for 15 minutes, stirring occasionally to make sure it doesn't stick to the bottom.

3
Phase 3

Take the pan off the heat and let cool for 10 minutes.

4
Phase 4

If you would like a smooth consistency you can use a hand blender on the cooled sauce. Depending on how thick you would like your banana ketchup you can add a little water bit by bit and stir through to loosen it.
