Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Soak the rice and the urad dal with fenugreek in water for 4-5 hours.
Grind the urad dal and then the rice into a smooth, fluffy batter; add the salt.
Cover and ferment in a warm place for 8-10 hours until light and risen.
Grease the idli molds and fill each with a spoonful of batter.
Steam for 12-15 minutes until a skewer inserted comes out clean.
Cool slightly, unmold, and serve with sambar and chutney.
