Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Soak the raw rice in water for 3 hours and drain.
Grind with the cooked rice, coconut, sugar, and yeast into a thin batter.
Cover and ferment 6-8 hours until bubbly; stir in the salt and coconut milk.
Pour a ladle of batter into a hot appam pan and swirl to coat the sides.
Cover and cook until the base is golden and the edges are crisp and lacy.
Serve hot with vegetable stew.
