Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Soak the rice and the urad dal with fenugreek in water separately for 4-5 hours.
Grind the urad dal and then the rice with water into a smooth batter; stir in the salt.
Cover and ferment in a warm place for 8-10 hours until doubled and airy.
Pour a ladle of batter on a hot tawa and spread it into a thin circle.
Drizzle oil around the edges and cook until the base is golden brown.
Fold in half and serve hot with chutney and sambar.
