Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Mix the flour, salt, carom seeds, turmeric, and oil; knead with water into a firm dough.
Divide into 10 balls and roll each into a very thin round khakhra.
Toast each on a hot tawa until crisp.
Roast further under a heavy weight or grill until fully crisp and light golden.
Cool completely and store in an airtight jar.
