Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Mix the flour, carom seeds, salt, and melted ghee; knead with yogurt and water into a stiff dough.
Divide the dough into 8 equal balls and smooth each into a round baati.
Bake the baatis on a hot tawa or in an oven until golden and firm.
Immerse the hot baatis in warm ghee and let them absorb it.
Serve hot with dal, ghee, and red chili chutney.
