Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Mix the flour, bicarbonate of soda, and salt with yogurt, and knead with milk into a soft dough; rest 30 minutes.
Season the mashed potato with red chili powder, coriander, and salt.
Stuff each ball of dough with the potato mixture and pinch the edges closed.
Roll each stuffed ball into a thick oval kulcha.
Cook on a hot tawa or in a tandoor until blistered, then brush with butter.
Serve hot with chole and mint chutney.
