Fragrant aged basmati rice layered with spiced meat, saffron-infused milk, and sweet caramelised onions, sealed and slow-cooked in dum style.
Rub the ghee and salt into the flour; knead with water into a soft, smooth dough; rest 30 minutes.
Divide into small balls and brush them lightly with oil.
Roll each ball into a thin 5-inch circle without dusting with flour.
Deep-fry in hot ghee or oil, pressing gently with a slotted spoon, until the luchis puff and turn pale golden.
Drain and serve hot with alur dom or dal.
