Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Knead the flour with water into a soft dough; rest 20 minutes.
Mix the paneer, coriander, green chilies, ginger, garam masala, and salt.
Fill each dough ball with the paneer mixture and seal the edges.
Roll the stuffed balls into 6-inch parathas.
Cook on a hot tawa with ghee until golden brown on both sides.
Serve hot with butter or yogurt.
