An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Soak the basmati 30 minutes; fry half the onions in the ghee until deep brown and crisp and drain.
In the remaining ghee, crackle the cumin, bay leaves, and cardamoms, then sauté the rest of the onion and the green chilies until soft.
Add the drained rice with 2 1/2 cups water and salt, bring to a boil, cover, and simmer 12 minutes.
Sprinkle the garam masala, mint, and crisp fried onions on top, seal, and rest 10 minutes.
Fluff gently and serve hot with raita.
