An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Sprinkle the salted water little by little into the rice flour, rubbing between palms until it holds when pressed but still crumbles freely.
Fill a puttu maker with a layer of grated coconut, then the moistened flour, repeating and finishing with coconut on top.
Fit the maker onto a pot of boiling water and steam 6 minutes until fragrant steam escapes.
Push the puttu out and crumble it gently.
Serve warm with sliced banana, kadala curry, or a crisp papad.
