Fragrant aged basmati rice layered with spiced meat, saffron-infused milk, and sweet caramelised onions, sealed and slow-cooked in dum style.
Mix the chicken with yogurt, ginger-garlic paste, and garam masala and rest for 1 hour.
Soak the basmati and parboil it with whole spices until half done.
Simmer the marinated chicken in its own juices until tender.
Layer the chicken and rice in a heavy pot with the fried onions.
Drizzle with saffron milk, kewra water, and ghee, then seal the pot.
Dum on low heat for 25 minutes.
Gently fluff and serve the biryani hot.
