Chef's Menu Description

Sustainably sourced fresh fish fillet pan-seared with a crisp skin, served with garlic herb butter, seasonal vegetables, and lemon.

Ingredients

  • • 3 small abalone (about 300 g)
  • • 1 cup short-grain rice, soaked 30 minutes
  • • 8 cups water
  • • 1 tbsp toasted sesame oil
  • • 3 cloves garlic, minced
  • • 1 tbsp soy sauce
  • • 1 tsp coarse salt
  • • 1 spring onion, sliced

Preparation Steps

1
Phase 1

Remove the abalone from the shells, clean off the black edges, slice thin, and set aside the green livers.

2
Phase 2

Toast the drained rice in sesame oil over medium heat 2 minutes, then add the abalone and garlic and stir until fragrant.

3
Phase 3

Pour in the water and simmer 30-40 minutes, stirring often so the rice breaks down into a smooth porridge.

4
Phase 4

Mash the livers into the pot, then season with soy sauce and salt.

5
Phase 5

Ladle into bowls and top with spring onion and a drop of sesame oil.
