An indulgent artisan dessert, beautifully crafted with premium ingredients and presented with exquisite garnishes for a memorable finale.
Rinse the dried omija berries briefly under cold water to remove dust.
Soak the berries in 3 cups of cool or warm (not boiling) water for 4 to 6 hours until the liquid turns a deep ruby red.
Strain the tea through a fine mesh sieve into a pitcher, discarding the berries, as boiling or long steeping turns it bitter.
Stir in honey and sugar while the tea is still room temperature so it dissolves completely.
Refrigerate the tea until well chilled.
Pour into cups over the pear slices if using, and float pine nuts on top before serving.
