Ingredients

  • • 500g mung bean sprouts (sukju)
  • • 1 tsp fine sea salt, plus more for the water
  • • 3 cloves garlic, minced
  • • 2 spring onions, thinly sliced
  • • 1 tbsp toasted sesame oil
  • • 1/2 tsp soy sauce
  • • 1 tsp toasted sesame seeds
  • • 1/4 tsp ground white pepper

Preparation Steps

1
Phase 1

Rinse the bean sprouts and pick out any husks or darkened sprouts.

2
Phase 2

Bring salted water to a boil, add the sprouts, and cook uncovered for 3-4 minutes until limp but still snappy.

3
Phase 3

Drain well and let steam escape for 2 minutes so they stay crisp rather than watery.

4
Phase 4

While still warm, toss with garlic, spring onions, sesame oil, soy sauce, salt, and white pepper.

5
Phase 5

Sprinkle with sesame seeds and serve at room temperature or chilled.
