An authentic Swiss alpine apéro board: aged Bernese or Valais Alpkäse cut into generous bite-sized cubes, accompanied by pickled pearl onions (Silberzwiebeln), cornichons, and dark rye bread.
Remove the Alpkäse from the refrigerator 45 minutes prior to serving so its complex mountain pasture herbs and rich buttery notes release fully.
Trim the dry outer rind with a cheese knife. Cut into rustic 2cm cubes, displaying the fine tyrosine crystals.
Pile the cheese cubes in the centre of a rustic wooden alpine platter. Drain the Silberzwiebeln and cornichons on paper towels and arrange beside the cheese.
Surround with thick slices of dark sourdough rye bread, insert wooden cocktail picks, and serve with chilled Swiss Fendant white wine.
