The quintessential Swedish cheese tart: a flaky buttery pastry shell filled with a rich custard of aged Västerbottensost cheese, double cream, and eggs, topped with löjrom, crème fraîche, and dill.
Rub cold butter into flour and salt until crumbly. Add cold water, press into dough, and press into a 24cm tart tin. Prick base and chill 30 minutes.
Bake crust at 200°C for 10 minutes until lightly set.
Whisk eggs, cream, milk, salt, and white pepper. Spread grated Västerbottensost evenly across the crust base and pour custard over.
Bake at 200°C for 25-30 minutes until set and golden brown on top. Let cool to warm room temperature. Serve with dollops of crème fraîche and löjrom.
