Traditional Swedish mash of golden rutabaga (swede), potatoes, and sweet carrots simmered in vegetable broth and whipped with butter, sea salt, and a pinch of ground ginger.
Place cubed rutabaga and carrot in a large pot of salted water. Bring to a boil and cook for 15 minutes, as rutabaga takes longer to cook than potatoes.
Add cubed potatoes to the pot and continue simmering for an additional 15-20 minutes until all root vegetables are fork-tender.
Drain vegetables, reserving 100ml of cooking broth. Mash thoroughly with a potato masher, adding butter and enough broth to reach a rich, spoonable consistency.
Season with sea salt, white pepper, and a subtle pinch of ginger. Serve piping hot with melted butter pooled on top.
