Est. Time: 20 min  •  4 Preparation Steps

Chef's Menu Description

The quintessential Swedish starter created by culinary icon Tore Wretman: golden butter-crisped toast piled high with creamy coldwater prawn Skagen salad, crowned with bleak roe (löjrom) and fresh dill.

Ingredients

  • • 350g sweet Arctic coldwater prawns, hand-peeled and dried
  • • 3 tbsp whole-egg mayonnaise
  • • 2 tbsp crème fraîche
  • • 3 tbsp fresh dill, finely chopped
  • • 1 tsp Dijon mustard
  • • 1 tbsp lemon juice, salt, and white pepper
  • • 4 thick slices white levain or sourdough bread, crusts removed
  • • 40g butter for pan-frying toast
  • • 60g Kalix löjrom or red lumpfish roe, fresh dill fronds, lemon wedges

Preparation Steps

1
Phase 1

Whisk mayonnaise, crème fraîche, dill, Dijon mustard, lemon juice, salt, and white pepper. Fold in dried prawns. Chill.

2
Phase 2

Melt butter in a skillet over medium-high heat. Fry bread slices until golden brown and crisp on both sides. Drain on paper towels.

3
Phase 3

Place warm toasts on plates. Top each toast with a generous dome of chilled prawn Skagen salad.

4
Phase 4

Crown each portion with a gleaming spoonful of löjrom roe, a fresh dill frond, and serve with a lemon wedge.
