Classic homemade Swedish lingonberry jam made with wild mountain lingonberries simmered with cane sugar. The essential sweet-tart accompaniment to meatballs, black pudding, and potato pancakes.
Pick through lingonberries to remove leaves and stems. Rinse under cold running water and drain thoroughly.
Place lingonberries and water in a stainless steel saucepan. Bring to a gentle boil and simmer for 5-7 minutes until berries burst and release their ruby juice.
Remove from heat, add sugar, and stir gently until completely dissolved. Skim off any surface foam.
Pour hot jam into warm sterilized glass jars. Natural pectin in lingonberries will set the jam into a soft preserve. Cool and store chilled.
