Chef's Menu Description

Traditional pickled cucumbers steeped in a classic spiced pickling brine with yellow mustard seeds, crown dill, and whole black peppercorns. Crispy, sweet, and delightfully sharp.

Ingredients

  • • 600g small firm pickling cucumbers (Västeråsgurka), sliced in ridged rounds
  • • 150ml distilled vinegar (ättiksprit 12%)
  • • 250g granulated sugar
  • • 300ml water
  • • 1 tbsp yellow mustard seeds
  • • 2 heads fresh crown dill (krondill) or dill sprigs
  • • 1 tbsp sea salt

Preparation Steps

1
Phase 1

Rinse cucumbers thoroughly and slice into 4mm rounds. Toss with 1 tbsp sea salt in a colander and let drain for 1 hour, then pat dry.

2
Phase 2

Combine vinegar, sugar, water, and mustard seeds in a stainless steel saucepan. Bring to a gentle simmer until sugar dissolves completely, then cool.

3
Phase 3

Pack sliced cucumbers tightly into sterilized glass preserving jars, layering with fresh crown dill heads throughout.

4
Phase 4

Pour the cool pickling brine over the cucumbers until submerged. Seal tightly and mature in the refrigerator for at least 24 hours before opening.
