Gurksallad (Pressgurka)

Est. Time: 15 min (plus pressing)  •  4 Preparation Steps

Chef's Menu Description

Traditional pressed Swedish cucumber salad: translucent ribbons of cucumber pressed under weights to extract moisture, then tossed in an authentic 1-2-3 sweet vinegar brine with fresh curly parsley.

Ingredients

  • • 1 large English cucumber (thinly sliced on a mandoline)
  • • 1 tsp fine sea salt (for drawing out liquid)
  • • 2 tbsp Swedish distilled vinegar (ättiksprit 12%)
  • • 3 tbsp granulated sugar
  • • 100ml cold water
  • • 3 tbsp fresh flat-leaf parsley, finely chopped
  • • Pinch of freshly ground white pepper

Preparation Steps

1
Phase 1

Layer thinly sliced cucumber on a plate, sprinkling lightly with sea salt. Place an inverted saucer on top and weigh down with a heavy jar for 30 minutes.

2
Phase 2

Drain thoroughly and gently press the cucumber slices in a clean tea towel to remove excess liquid.

3
Phase 3

Whisk distilled vinegar, sugar, cold water, and white pepper until the sugar crystals are completely dissolved.

4
Phase 4

Toss the pressed cucumbers with the sweet vinegar dressing and chopped parsley. Chill for 20 minutes before serving alongside meatballs or roasts.
