Beloved Swedish family comfort food: elbow macaroni baked with a savoury custard of whole milk, eggs, nutmeg, grated Västerbotten cheese, and diced smoked ham, baked until bubbly and golden.
Boil macaroni in salted water for 7 minutes (slightly undercooked). Drain and toss with diced smoked ham. Spread evenly into a buttered baking dish.
In a bowl, whisk together eggs, whole milk, cream, grated nutmeg, salt, white pepper, and half of the grated cheese.
Pour the custard mixture evenly over the macaroni and ham. Scatter the remaining grated cheese generously across the top.
Bake at 200°C for 30-35 minutes until the custard is set in the center and the cheese crust is bubbling and golden-brown. Serve with ketchup and tomato salad.
