La Mancha's celebrated slow-simmered vegetable stew: sweet onions, red and green peppers, courgettes, and ripe tomatoes cooked slowly in olive oil until meltingly tender and sweet.
Heat 4 tbsp olive oil in a deep cazuela or skillet. Sauté onions and peppers over medium heat for 12-15 minutes until soft and sweet.
Add diced courgettes and garlic, cooking for another 10 minutes, stirring occasionally.
Add chopped tomatoes, sugar, salt, and pepper. Lower heat and simmer gently for 25-30 minutes until vegetables are meltingly tender and all tomato water has reduced into a thick, glossy stew.
Drizzle with a little raw olive oil. Serve warm or room temperature with crusty bread, optionally topped with a crisp fried egg.
