Portugal's famous 'green eggs': hard-boiled egg halves filled with a seasoned purée of yolks, abundant fresh parsley, and lemon, coated in breadcrumbs and fried golden.
Slice hard-boiled eggs in half lengthwise. Carefully pop yolks into a bowl, setting the hollow white halves aside.
Mash yolks with minced parsley, shallot, olive oil, lemon juice, salt, and white pepper until a vibrant green, fragrant paste forms. Fill each egg white half with the green yolk mixture, smoothing flat.
Dust egg halves in flour, dip in beaten egg, and roll in fine breadcrumbs, ensuring the filled side is well coated.
Fry in hot oil at 180°C for 2 minutes until crisp and golden brown. Drain on paper towels and serve warm or cold with salad.
