A quick Portuguese household favorite: spiral pasta tossed in a rich homemade refogado of sweet onions, garlic, ripe tomatoes, canned Portuguese tuna in olive oil, and black olives.
Heat olive oil in a wide skillet over medium heat. Sauté chopped onion, garlic, and bay leaf for 6-8 minutes until soft and translucent.
Pour in tomato passata, season with salt, pepper, and oregano, and simmer gently for 10 minutes until thick and glossy.
Flake the drained tuna into the sauce, add black olives, and gently stir over low heat for 2-3 minutes to heat through without breaking the tuna into paste.
Cook pasta in boiling salted water until al dente. Drain, toss immediately with the hot tuna tomato sauce, and finish with freshly chopped parsley.
