Traditional Polish marinated herring steeped in cold-pressed oil with thinly sliced sweet onions, allspice berries, bay leaves, and crushed peppercorns for a tender, succulent zakąska.
Soak the herring fillets in cold water for 40 minutes, changing water once. Pat completely dry with kitchen paper and slice into 3cm pieces.
Place the sliced onions in a colander and pour boiling kettle water over them for 5 seconds to mellow their raw sharpness while preserving their crisp bite. Drizzle with vinegar or lemon juice.
In a sterilised glass jar, alternate layers of sliced herring, blanched onions, allspice berries, bay leaves, and cracked black peppercorns.
Pour the oil slowly into the jar until all ingredients are completely submerged without air pockets. Seal and chill in the refrigerator for at least 24 hours before serving with dark rye bread.
