Chef's Menu Description

The historic national Dutch celebration dish commemorating the Relief of Leiden in 1574: winter carrots, yellow onions, and floury potatoes simmered together and mashed with butter, milk, and nutmeg.

Ingredients

  • • 800g floury Dutch potatoes (such as Bildtstar), peeled and chopped
  • • 600g winter carrots (winterpeen), peeled and diced
  • • 400g yellow onions, coarsely chopped
  • • 150ml warm whole milk
  • • 50g salted Dutch butter
  • • 1 tbsp wholegrain mustard
  • • 1/2 tsp freshly ground whole nutmeg
  • • Sea salt and freshly cracked black pepper

Preparation Steps

1
Phase 1

In a large soup pot, place the potatoes at the bottom, layer the diced winter carrots in the middle, and top with the chopped yellow onions. Add enough salted water to come two-thirds up the ingredients.

2
Phase 2

Bring to a boil, reduce the heat to medium-low, cover, and simmer for 25 minutes until the carrots and potatoes are tender when pierced with a fork.

3
Phase 3

Drain off the cooking water thoroughly, reserving half a cup. Add the butter, warm milk, and mustard. Use a potato masher to crush everything together into a textured, rustic orange mash.

4
Phase 4

Stir in the freshly grated nutmeg, sea salt, and black pepper. Mound onto plates with a hollow in the middle for vegetarian gravy and serve steaming hot.
