Leverworst Plate

Est. Time: 15 mins  •  4 Preparation Steps

Chef's Menu Description

A traditional Dutch café borrelplank cold cuts plate featuring thick round slices of classic Dutch liver sausage (leverworst), sweet Amsterdam pickled onions, and sharp table mustard.

Ingredients

  • • 250g traditional Dutch liver sausage (fijne or boeren leverworst)
  • • 100g Amsterdam sweet yellow pickled onions (Amsterdamse uitjes)
  • • 3 tbsp Zaanse or Dutch sharp table mustard
  • • 8 sweet-and-sour cornichons
  • • Traditional Dutch crackers or rye bread rounds
  • • Fresh flat-leaf parsley for garnish

Preparation Steps

1
Phase 1

Peel the outer casing from the chilled Dutch liver sausage. Using a sharp knife, slice the sausage into even 1cm thick rounds.

2
Phase 2

Fan out the liver sausage slices across an earthenware platter or rustic wooden board in a neat overlapping circle.

3
Phase 3

Place a small dish of Dutch table mustard in the centre. Scatter the bright yellow pickled Amsterdam onions and cornichons in the corners of the platter.

4
Phase 4

Tuck thin rounds of dark rye bread and crackers around the perimeter, garnish with fresh parsley, and serve with cocktail picks.
