Chef's Menu Description

An exquisite Dutch coastal starter uniting sweet North Sea brown shrimp (Hollandse garnalen) and tender soused raw herring, dressed with lemon crème fraîche and fresh garden dill.

Ingredients

  • • 200g sweet North Sea brown shrimp (Hollandse garnalen), peeled
  • • 2 fresh Dutch soused herring fillets (Hollandse Nieuwe)
  • • 3 tbsp crème fraîche
  • • 1 tsp freshly grated lemon zest
  • • 1 tbsp fresh lemon juice
  • • 2 tbsp fresh dill, finely chopped
  • • 1 small shallot, finely minced
  • • Cracked black pepper and sea salt
  • • Rye toast points for serving

Preparation Steps

1
Phase 1

In a mixing bowl, whisk together the crème fraîche, lemon juice, lemon zest, minced shallot, and chopped dill until smooth. Season lightly with sea salt and cracked black pepper.

2
Phase 2

Gently fold two-thirds of the delicate North Sea brown shrimp into the herb dressing, being careful not to break the tender shrimp bodies.

3
Phase 3

Slice the tender herring fillets on the bias into elegant bite-sized strips about 2cm wide.

4
Phase 4

Spoon the dressed brown shrimp onto chilled glass plates. Drape the herring strips across the top, scatter the remaining pristine shrimp over the plates, garnish with dill fronds, and serve with thin rye toast points.
