Traditional Irish potato pancakes folded with grated carrots, leeks, and courgettes, pan-fried in butter until crispy on the edges and served with herb sour cream.
Combine mashed potato, raw potato, grated carrot, leek, flour, bicarb, salt, and buttermilk into a thick batter.
Melt butter in a wide frying pan over medium heat. Drop large spoonfuls of batter and flatten slightly.
Fry for 4-5 minutes per side until golden brown and crispy at the edges.
Serve hot with a dollop of sour cream and freshly snipped chives.
