Beloved Hungarian fried breaded cheese: thick slices of Trappista cheese double-coated in crunchy breadcrumbs and fried golden with gooey melted centres.
Cut cold Trappista cheese into thick rectangular slices. Keep chilled until ready to bread.
Dredge cheese slices in flour, dip in beaten egg, coat in breadcrumbs, then dip in egg and breadcrumbs a second time to seal completely.
Heat oil to 180°C. Fry breaded cheese slices quickly for 1.5 to 2 minutes per side until crisp and golden without letting the cheese burst.
Lift out onto kitchen paper, drain briefly, and serve immediately while the cheese is molten and stretchy.
