Golden crumbed Hungarian fried button mushrooms: fresh whole mushroom caps dredged in seasoned flour, beaten eggs, and fine breadcrumbs, fried crisp.
Wipe mushrooms clean with damp paper towels, trim stems flush with caps, and lightly season with salt.
Dredge each mushroom cap in flour, dip into beaten egg, and coat thoroughly in fine breadcrumbs, pressing lightly to adhere.
Heat 2cm sunflower oil in a skillet to 175°C. Fry mushrooms in batches for 4 to 5 minutes, turning until evenly golden-brown and crisp.
Drain on wire rack or paper towels, sprinkle with sea salt, and serve piping hot with tartar sauce and lemon wedges.
