A classic Hungarian-Central European side dish of tender white rice cooked with sweet green garden peas, butter, and freshly chopped parsley.
Melt half the butter in a lidded pan over medium heat. Sauté the minced shallot until soft, then stir in the rice to coat each grain in butter.
Pour over the hot vegetable broth, season with salt and pepper, bring to the boil, cover tightly, and simmer on low heat for 12 minutes.
Scatter the tender garden peas across the surface of the rice, replace the lid, and continue cooking for 5 minutes until both rice and peas are perfectly tender.
Stir in the remaining cold butter and chopped fresh parsley, fluffing with a fork into a colourful, fragrant side dish.
