The ultimate Greek baked bean masterpiece: giant elephant beans baked in a terracotta dish with sweet caramelized onions, garlic, carrots, tomatoes, celery, and abundant olive oil.
Heat 4 tbsp olive oil in a skillet. Sauté sliced onions, carrots, celery, and garlic for 10 minutes until softened and sweet. Add tomatoes, paprika, bay leaf, salt, and pepper, simmering for 10 minutes.
Transfer the tender Gigantes beans into a large ceramic or clay baking dish. Pour the vegetable tomato sauce over the beans and fold gently together.
Drizzle remaining olive oil and 150ml bean cooking broth over the top. Bake uncovered at 190°C for 50-60 minutes until beans have absorbed the savory flavors and the surface is caramelized and bubbly.
Scatter fresh chopped parsley over top. Let rest for at least 20 minutes before serving warm with feta cheese and bread.
