Crisp golden filo pastry triangles stuffed with fresh baby spinach, tangy Greek feta, spring onions, fresh dill, and nutmeg, baked until shatteringly flaky.
Chop squeezed dry spinach. Combine with crumbled feta, spring onions, beaten egg, chopped dill, nutmeg, and black pepper in a bowl.
Cut filo pastry sheets lengthwise into 7cm wide strips. Keep covered with a damp tea towel.
Brush a strip of filo with melted butter. Place 1 tablespoon of filling at one end. Fold the corner over the filling into a triangle, then continue folding flag-style along the strip to encase filling.
Place triangles on a baking sheet, brush tops with melted butter, and bake at 190°C for 20-22 minutes until deep golden brown and crisp. Serve warm.
