Ντοματοκεφτέδες Σαντορίνης (Santorini Tomato Fritters)

Est. Time: 30 min  •  4 Preparation Steps

Chef's Menu Description

Santorini's legendary meze: sweet, sun-ripened cherry tomatoes crushed and combined with red onions, fresh spearmint, oregano, and flour, pan-fried until crisp and golden.

Ingredients

  • • 500g sweet ripe cherry or plum tomatoes (Santorini tomatoes), diced small
  • • 1 red onion, finely diced, 2 spring onions sliced
  • • 1 bunch fresh spearmint (δυόσμος) chopped, 1 tbsp fresh oregano
  • • 120g self-raising flour (or plain flour with 1/2 tsp baking powder)
  • • 100g crumbled Greek feta (optional, traditional in many tavernas), salt and pepper
  • • Olive oil for shallow frying

Preparation Steps

1
Phase 1

In a bowl, crush diced tomatoes lightly with your hands to release juices. Add diced red onion, spring onions, chopped mint, oregano, salt, and black pepper.

2
Phase 2

Gently fold in crumbled feta and add flour gradually, stirring with a fork until a thick, spoonable batter forms.

3
Phase 3

Heat 1cm olive oil in a wide skillet over medium-high heat. Drop tablespoons of batter into the hot oil. Fry for 3-4 minutes per side until deeply golden, puffy, and crispy on edges.

4
Phase 4

Drain on paper towels and serve immediately with cool Greek yoghurt or tzatziki.
