Bitter wild dandelion and chicory greens (radikia) gently boiled tender and served warm with abundant Greek extra virgin olive oil and freshly squeezed lemon juice.
Trim root ends and wash the wild greens thoroughly in cold water to remove all traces of soil.
Drop greens into a large pot of boiling salted water. Cook uncovered for 10-12 minutes until stalks are tender to the bite.
Lift with tongs into a colander, drain well (reserve nutrient-rich cooking broth for drinking as a tea if desired).
Transfer warm greens to a platter, douse generously with extra virgin olive oil, squeeze over fresh lemon juice, sprinkle with flaky sea salt, and serve.
