Φάβα Σαντορίνης (Fava Santorinis Split Pea Purée)

Est. Time: 45 min  •  4 Preparation Steps

Chef's Menu Description

Santorini's golden PDO yellow split pea purée simmered with sweet onions until meltingly soft, whipped with Greek olive oil, topped with red onions and capers.

Ingredients

  • • 250g yellow split peas (Santorini fava)
  • • 1 large yellow onion chopped, 1 litre water, 1 bay leaf
  • • 6 tbsp Greek extra virgin olive oil, juice of 1 lemon, 1 tsp salt
  • • Garnish: 1 red onion finely diced, 2 tbsp capers rinsed, wild oregano, raw olive oil

Preparation Steps

1
Phase 1

Rinse yellow split peas. Bring to a boil in water with chopped onion and bay leaf, skimming off any foam. Lower heat, cover, and simmer for 40 minutes until split peas disintegrate completely into mush.

2
Phase 2

Remove bay leaf. Purée the warm peas with an immersion blender or wooden spoon while drizzling in olive oil, lemon juice, and salt until completely silky and smooth.

3
Phase 3

Spoon warm fava onto a wide shallow plate, using the back of a spoon to create shallow swirls across the surface.

4
Phase 4

Scatter finely diced red onion and capers into the swirls, drizzle with generous extra virgin olive oil, dust with wild oregano, and serve warm or at room temperature.
