Traditional Greek pearl pasta (kouskousaki) tossed in sweet cultured butter and olive oil with sweet caramelized onions, wild Greek oregano, and salty crumbled feta.
Melt butter with 2 tbsp olive oil in a skillet over medium-low heat. Cook sliced onions slowly for 12-15 minutes until sweet, soft, and golden brown.
Meanwhile, cook the kouskousaki in plenty of boiling salted water for 8-9 minutes until tender yet al dente. Reserve 60ml of pasta cooking water and drain.
Tip the drained pasta into the skillet with the caramelized onions. Add reserved cooking water, remaining olive oil, and half the crumbled feta. Toss vigorously over low heat for 1 minute until creamy.
Crush wild Greek oregano between your palms over the pasta, top with remaining crumbled feta, and season with black pepper. Serve immediately.
